Additionally, eating just one sweet potato a day gives you 102% of the vitamin A you need each day. This keeps your eyes healthy, as well as your immune system.
Sweet potatoes also boast of B vitamins , vitamin C, calcium, iron, magnesium, phosphorus, potassium, thiaman and zinc.
They are also full of antioxidants, which means they have the power to protect your cells from day to day damage.

Wow! I’ve got to incorporate sweet potatoes into my diet.
But eating a baked sweet potato a day, or a boiled one, can get a little boring.
In in an attempt to jazz up this nutrient packed vegetable, I have fashioned the sweet potato swirl, an easy 6 ingredient desert that tastes like you’re in a five star restaurant.
INGREDIENTS
- 4 small sweet potatoes
- 1 tbs feta cheese
- 2 cloves garlic
- 3 tbs plant based milk
- 1 tsp cinnamon
- 1 c Greek yogurt
METHOD
- Boil the sweet potatoes until done
- Peel sweet potatoes discarding skin
- In a high speed blender place sweet potatoes, feta, garlic and cinnamon
- Add plantbased milk
- Blend until creamy
- In a desert cup or glass add approximately a half a cup of yogurt.
- Top with sweet potato mixture
Jazz up this desert with some cilantro tahini sauce, crushed walnuts and microgreens!

10. Garnish with microgreens
CILANTRO TAHINI SAUCE RECIPE
- 3 tbs of olive oil
- 3 tbs of lemon juice
- 2 tbs tahini
- 1 tbs honey
- 1 tsp dijon mustard
- 1/2 c basil
- 1/2 c cilantro
- pinch of salt
