INGREDIENTS
- 1 c corn
- 1/2 avocado
- 1/2 red onion
- 1/3 c cilantro
- 6-8 cherry tomatoes
- fresh lime juice
- 1-2 tbs olive oil
- Dash of cumin
- salt and pepper to taste
METHOD
- Chop veggies
- Toss all ingredients in a bowl
- Dress with lime juice and olive oil
- Stir and Enjoy 😉
