I. EASY UDON NOODLE STIRFRY
Don’t you just love a good stir fry that’s quick, easy and delicious?
It’s challenging getting your veggies in on a plant based diet, on any diet really. It’s even more challenging getting in your protein.
This recipe is Is packed full of nutrient rich vegetables, and the tofu provides a good source of protein.
You can use any noodle butt udon noodles are one of the healthiest of the Asian noodle selection.
INGREDIENTS
- 1 package of udon noodles
- 1/4 c red pepper
- 1/4 c broccoli
- 2 cloves garlic
- 1/4 c mushrooms
- 1/4 c carrots
- 1/3 block of tofu
- 1 tsp cornstarch
- sesame oil
- olive oil
METHOD
- Press tofu
- Break into bite size pieces
- Sprinkle with cornstarch and set aside
- Chop vegetables
- Add sesame oil to a wok or non stick pan
- Stirfry tofu 3-4 minutes
- Add mushrooms
- Add broccoli, carrots and red pepper
- Stirfry 3-4 minutes
- Remove udon noodles from the package
- Rinse noodles with warm water separating them
- Add noodles to stirfry
- Add your favorite sauce (See below)
- Stir until covered
- Serve over rice or eat plain
- Top with sesame seeds and green onion (optional)

II. TOFU IN CREAMY SPINACH SAUCE
In this recipe, inspired by the vegetarian recipe “Palak Paneer”, I use panfried tofu instead of paneer.
I highly recommend this delicious dish. Not only are you getting a popeye’s quantity of nutritious, fortified spinach, the tofu provides a satisfying source of protein for those on a vegan, veggie or plant based diet 🌱
Method. Blanch spinach, rinse w cool water and blend in a high speed blender adding red pepper flakes. Press and slice tofu. Toss with cornstarch, pan fry in oil until done. In a pan, saute onions and garlic. Add greens 💚 mix, add garam masala, salt, pepper, sugar and fresh lime juice. Add your cooked tofu, stir and enjoy 😉

- 1 block of tofu
- 1 onion
- 3-4 cloves garlic
- Chile pepper or flakes
- 1 tbs garum masala
- 1 tsp salt
- 1 tsp sugar
- squeeze of fresh lime
METHOD
- Chop onion and garlic
- Blanch spinach saving some of the water
- blend spinach and chili pepper or flakes in a high-speed blender adding some of the water
- Cook paneer or tofu in a nonstick pan with oil
- Add butter
- Add spinach mixture
- Add spices
- Enjoy with naan bread or over jasmine rice
III. GENERAL TSOS TOFU
What’s your favorite tofu recipe?
This recipe by @noracooks is the perfect copycat to General Tso’s chicken but with Tofu.
Just stir fry your pressed tofu, cornstarch sprinkled tofu in a pan and slowly add sauce until it thickens.
Sauce- Equal parts soy sauce and rice wine vinegar, garlic, ginger, olive oil, water, cornstarch, and chili flakes.
High protein and delicious! 💚
