ROASTED BEET AND PEACH SALAD RECIPE

Looking for fun and creative ways of getting your veggies in?

Try this easy deliciously gourmet beet and peach salad. It’s so easy to make and it’s best served warm.

INGREDIENTS

  • 4 beets
  • 1 red onion
  • 2-3 peaches
  • 3 cloves garlic
  • 2 tbs lemon juice
  • 2 tbs honey
  • walnuts
  • salt and pepper
  • olive oil
  • feta cheese (optional)
  • Spinach

METHOD

  1. preheat oven to 425
  2. Line a baking pan with foil
  3. chop beets, peaches and onions
  4. Place in a container and add olive oil, salt and pepper
  5. Put beets on lined baking dish
  6. Add sliced peaches, onions, walnuts and garlic on the baking pan
  7. drizzle with olive oil

8. Bake in oven 25 minutes

9. Turn beets over and take out onions

10. Drizzle beets and walnuts with lemon 🍋 honey sauce (equal parts lemon juice and honey)

11. Bake for 10-15 minutes more or until carmelized

12. In a salad bowl, place your spinach

13. Add warm beets, peaches, walnuts, garlic and onions on top of this spinach.

14. Add feta cheese (optional)

15. Enjoy 😉
