We all know that Stir Fry Recipes are healthy and delicious, but what better way to paint the rainbow of your pallet on a Whole Food Plant Based diet?
Below are 3 of my favorite dishes so far but I’ve only just begun to explore. I’ll be adding more delicious recipes as I go. Stay tuned 😉
I. SPICY GREEN BEANS WITH VEGGIE GROUND BEEF
Relish in the vibrant green colors of snappy fresh green beans accompanied with ground beef made from veggies. Sure, there will be haters claiming that imitation meat has more sodium and preservatives than real meat but thats just not true. See Dr. Greger’s research talk on the subject.
As a relatively new vegetarian and food blogger, I am curious about these new meat substitutes and feel that they can get me over the hump with regard to an easier transition to a more plant-based diet.
Chicken Broccoli is definitely a favorite of mine. I made it for my boyfriend and he never even suspected it was not real chicken.
Yesterday I made this delicious spicy green bean and veggie ground beef stir fry inspired by Chef Tom. Amazing!
INGREDIENTS
1 bag of fresh green beans (1 lb)
1/2 bag of non meat ground beef
1 tbs sherry cooking wine
3 cloves garlic
1 tbs chopped or minced ginger
2 tbs soy sauce
1 tbs sesame oil
1 tbs xo sauce
3/4 cup water
1 small hot chili or chili flakes
vegetable oil
METHOD
- Cook veggie ground beef in oil on stovetop 5-6 minutes on medium heat, stirring
- set aside
- Add garlic, ginger and xo sauce to wok
- Stir
- Add green beans on stovetop and stir fry for 5 minutes
- Add veggie meat back in, sherry cooking wine, soy sauce
- Add water
- Add water and cornstarch mixture to thicken (optional, you could just cook until the water reduces)
- Add in basil and hot chili or flakes
- Stir
- Add sesame oil
- Taste and adjust as needed
- Serve over rice

II. BROCCOLI AND VEGGIE CHICKEN STIR FRY
INGREDIENTS
1 bag of meatless chicken tenders
1 large bag of frozen broccoli florets or 1 lb of fresh broccoli
3 cloves of garlic, minced
1 tbsp ginger, minced
2 large scallions, chopped
SAUCE
1 tbsp rice wine or apple cider vinegar
2 tbsp of maple syrup, brown sugar or honey
1/3 cup sesame oil
1/3 cup of soy sauce
1 cup of vegetable broth or water
2 tbsp cornstarch
METHOD
1.Place all ingredients in Mason jar and stir or shake
2. Set aside
HOW TO MAKE VEGAN CHICKEN AND BROCCOLI STIR FRY
1.Make the sauce. Whisk all sauce ingredients above in a jar or bowl and put aside
2. Cook the veggie chicken in the oven according to instructions
3. In a large wok or frying pan stir fry scallions, garlic and ginger on medium high heat
4. Add cooked meatless chicken and stir fry 2-3 minutes
5. Remove from pan and set aside
6. In same pan add broccoli florets and stir fry until tender (don’t overcook because you want the broccoli to be a little snappy)
7. Add sauce and stir until it thickens (be sure to taste the sauce. If its too salty add water little by little)
8. Add veggie chicken and stir
9. Sprinkle with sesame seeds (optional) and serve over brown rice or noodles
III. SESAME TOFU STIR FRY
INGREDIENTS
– 1 packet extra firm tofu
– 2 tbsp cornstarch
– 1 tbsp olive/sesame oil
– salt and pepper
– 2 tbsp maple syrup
– 1 tbsp gochujang chili paste (or hot sauce)
– 1 tbsp soy sauce
– 1 tbsp rice wine vinegar
– 1 tbsp olive/sesame oil
– 5 garlic cloves
– 1 medium shallot
– spring onions
– 1 red pepper sliced in strips
– 1 bag of frozen french style green beans
HOW TO MAKE SESAME TOFU STIR FRY
1.Press tofu
2.Cut tofu in cubes
3. In a bowl add cornstarch, oil, salt and pepper and toss tofu cubes covering them with cornstarch
4.Place tofu on parchment paper on baking pan and cook in oven at 400 degrees for 25 to 30 minutes turning half way through
5. Saute red pepper 3-4 minutes in pan or wok and set aside
6. Saute green beans 3-4 minutes in pan or wok and set aside
7. In bowl whip maple syrup, chili paste, rice vinegar, and soy sauce
8. In sauce pan, saute garlic, shallots, spring onions
9. Add sauce and stir
10. Add tofu and green beans, peppers and toss
11. Garnish with scallions and sesame and serve over rice
12. Sprinkle with sesame seeds & serve over brown rice or white rice
