Shrimp fried rice is always a favorite on the Chinese take out menu. Why? Because it’s so darn tasty and it even has vegetables in it.
This shrimp fried rice recipe will make you feel like you’re cheating on your (Almost) Whole Food Plant-based diet because it’s so rich and delicious. It’s also an opportunity to add some extra yummy vegetables.
I added broccoli in this recipe which is not traditionally included in a fried rice recipe. However it’s very tasty and it gives it an extra vibrant color.
Most recipes called for leftover cold white rice. You want your rice to be a little dry and sticky for a fried rice recipe. As you can see from the pictures my rice is yellow. I use brown rice that I cook with turmeric which makes it yellow in color and also makes it an even healthier dish (I’ve included my brown rice recipe below)
 Brown rice is a rich source of dietary fiber which can reduce your risk of death from heart disease. Brown rice also contains high levels of magnesium which makes you less vulnerable to heart disease and stroke. (Webmd.com/diet/health-benefits-brown-rice#1)
So if you haven’t already switched over to Brown rice now is a good time to start. For years I just couldn’t stand Brown rice until I found the recipe suggested below.
Now back to Shrimp Fried Rice. Get your leftover rice and gather the ingredients because the recipe goes fast.
I cook my eggs, vegetables and shrimp separately because that way I can cook it to the desired consistency with seasoning (for shrimp) and I’m less likely to overcook it.
SHRIMP FRIED RICE RECIPE
INGREDIENTS
1/2 lb of shrimp
5-6 cups of cooked rice
3 eggs
scallions
1 carrot
½ onion
1 cup of broccoli
1/4 cup soy sauce
1 tbs oyster sauce
1 tsp brown sugar
1 tbs sesame oil
1 tbs minced ginger
1/2 cup peas
HOW TO MAKE SHRIMP FRIED RICE
- Chop vegetables
- Beat eggs and scramble (don’t overcook) and set aside
- Add oil to wok and add ginger and carrots when oil is hot. stir fry 3-4 minutes
- Add garlic and onions and cook 2 more minutes
- Remove and set aside
- Add a little more oil and stir fry frozen broccoli.
- Add peas and cook 2 minutes
- Remove and set aside
- Add sesame oil to wok and cook shrimp on medium high heat until done and a little crispy. Add oyster sauce and sugar
- Remove and set aside
- Add oil to wok and wait until its hot. Add rice and stir fry on medium high heat letting it get crispy on the bottom before stirring. Add soy sauce Stir fry 5-7 minutes or until done.
- Add all other ingredients and toss
- Serve and enjoy
BROWN RICE RECIPE
INGREDIENTS
2 cups of brown rice
3 cups water
1 tbs turmeric
½ onion
3 cloves garlic
Olive oil
½ tbs adobo seasoning
Carrots and peace optional
HOW TO MAKE BROWN RICE
- wash and rinse rice
- Brown onion and garlic in Olive oil on top of stove or in rice cooker on the Brown setting.
- Add seasonings Add seasonings
- Add rice and stir to 2 to 3 minutes
- Add water
- Cook rice in rice cooker on Brown rice setting
