Fish Tacos are one of my absolute favorite foods! So when I heard that fish was not part of the wfpb diet I struggled with the idea.
But then I found out that they made plant based fish. I thought I’d give it a try so I bought Gardein’s plant based fish. I had previously used it for a zucchini, carrot fish stir fry and it was really good!
Experts say to eat the rainbow meat meaning to eat a wide variety of colorful foods. You’ll have it nailed with this colorful vibrant dish that is pleasing to the eye and delicious!
The sweet tangy creamy taste of the cabbage slaw Is a joy to the palate and to the eyes with the vibrant purple of the cabbage and the mango hues of the fruit. Not to mention that its full of nutrients!

STEP 1 PREPARE THE SLAW
INGREDIENTS
1 cup of cabbage
2 cups red cabbage
1 cup cilantro
1-2 cloves garlic
1cup of Mandarin oranges with juice
1 cup mango
1 cup of mayonnaise
1 tsp seasoning salt
juice of fresh lemon
salt and pepper to taste
METHOD
- Chop all vegetables and fruits
- Combine mayo, garlic and mandarins in a bowl and stir
- Add remaining ingredients
- Stir
STEP 2 COOK THE PLANT BASED FISH
INGREDIENTS
2-4 plant based fish depending on the serving
vegetable oil
METHOD
1. Precook fish in microwave according to instructions on packet, but cook 1 minute less
2. Heat oil in pan
3. Stir fry 3 minutes
Now its time to make your taco!!!
I used wheat protein tortillas but you can use any kind of tortilla.
- Warm your tortilla in the oven or a toaster
- Add your plant base fish
- Add mango slaw
- Add avocado, red pepper slices or anything else you want
- Add fresh lime juice and hot sauce (optional)
- Enjoy!
