Mediterranean pasta
This is my absolute favorite meal now. It’s so easy to make and so unbelievably tasty.
Your main staples are artichokes, Greek olives, Sun Dried tomatoes and greens. Give it a base of onions and garlic sauteed in Olive oil and throw in some pasta and seasoning. Voila!
This recipe was originally presented with salmon so if you’re a fish eater, add salmon for a tasty fish dinner.
INGREDIENTS
- 1 jar artichokes
- 1 jar of Greek black olives
- 1 cup of sun dried tomatoes
- 1/2 onion
- 4-5 cloves of garlic
- 1 lb of linguini
- White wine
- Olive oil
- Seasoning
HOW TO MAKE MEDITERRANEAN PASTA
- Saute onions and garlic in olive oil
- Add salt
- Add artichokes
- Add sun dried tomatoes
- Add olives with 1/2 of its juice
- Cook pasta in another pot al dente (1-2 minutes under instructions)
- Add pasta into the sauce
- Add the greens
- Stir
- Season to taste
The combination of the robust flavors of the artichokes, sun dried tomatoes and Greek olives make this meal so flavorsome you’re not going to want to quit eating it. The greens add extra nutrients and a dash of color making this the perfect Mediterranean favorite.
HOW TO MAKE MEDITERRANEAN PASTA WITH SALMON
If you choose to make the pasta with salmon.
- Add oil to pan
- Pat salmon dry and season.
- Place salmon in a large pan skin side down on medium high heat and cook approximately 8-10 minutes or until skin is crisp and removes easily.
- Turn salmon over
- Add 1/4 cup of wine
- Turn down heat, cover and cook on low until done
- When its almost done, gently break salmon apart with a wooden spoon.
- Add salmon to pasta
Enjoy with a side salad and a glass of wine!
This dish can be made with penne pasta as well. Equally as delicious.
