Do you want a meal that’s tasty, that feeds a lot of people , that’s full of protein and freezes well? Try these tasty plant based burritos!
A Bean burrito is a good source of fiber and has 7 grams of protein. Gardein Ground Be’f is a Plant-Based, vegan and gluten free product that has 18 g of protein per serving increasing your per burrito protein intake considerably.
Make up a batch of these tasty filling burritos and freeze what you don’t eat for future healthy lunch box meals!
INGREDIENTS
2 c black beans or refried beans
2 c Plant Based ground beef (I used Gardein)
2 1/2 c rice (I used brown rice)
1 pepper, chopped fine
1 small onion, chopped
3-4 cloves garlic
1 packet of Taco seasoning
¾ c corn
Cheddar cheese, vegan
6 large flour tortillas (10 inch)
SALSA
1 can petite diced tomatoes
½ onion
3-4 cloves garlic
1 tsp cumin
Juice of fresh lime
Olive oil
Garlic salt
⅓ c cilantro
*This is my go to salsa recipe that I use for everything. I add a little bit of salsa to each burrito to give it a pop
METHOD
- Make your salsa and set aside
- Saute peppers, garlic and onions
- Add salt
- Add Plant Based ground beef
- Add taco seasoning
- Stir and cook 5-7 minutes
- Set aside
Now it’s time to build your burrito!
- Add a spoonful of beans to a 10″ tortilla
- Add your plant baked based ground beef mixture on top.
- Add rice
- Add corn
- Add bit of salsa
- Add the vegan cheddar cheese
Now it’s time to roll your burrito. If you don’t know how there’s plenty of YouTube Videos to walk you through it. I had to do this and was an expert by the end of the recipe.
Roll all of your burritos. Now you can either cook them all at the same time in the oven at 350 for 30 minutes, covered withaluminumfoil, Or you can Pan fry turning over after 5 minutes or so, Or you can wrap them in aluminum foil and freeze them and eat them at a later date.
