Callie’s Healthy Summer Salad

Want a cool, refreshing, healthy salad? It’s hot, sticky, and uncomfortable here in central Florida. What better meal option than this crisp, Mediterranean, cucumber salad?!

This recipe is by my best friend Callie. She served it with salmon patties and generous pours of wine at a ladies happy hour recently. Soooo delicious!

Summer Salad with Salmon Patties

In addition to being refreshing and delicious this salad is also very healthy!

CANNELLINI BEANS

Beans are one of the richest forms of protein for non meat eaters. They’re high in protein and fiber and low in calories. 1 serving of cannellini beans has the following Nutrition content:

Calories: 110

Fat:0

Carbohydrates: 19 g

Fiber: 4.9 g

Protein: 8 g

Calcium: 59.8 g

CUCUMBERS

Cucumbers are 95% water which is why they are crisp and refreshing. Along with potassium and vitamins K &c cucumbers have several phytochemicals with promising health benefits.

TOMATOES

Tomatoes are the main dietary source of the antioxidant lysopine, which has been linked to many health benefits including reduced risk of heart disease and cancer.

CILANTRO

Cilantro is a healthy aromatic herb that is a powerful Anti-inflammatory. The Cilantro combined with fresh lemon squeeze in this dish gives it a distinct Mediterranean flavor so be sure not to leave it out 😉

GREEN ONIONS

Green onions are also Anti-inflammatory, are good for the heart, boost immunity and keep your intestines clean. So be generous with those onions!

Summer Salad and Avocado Toast

INGREDIENTS

1 large English Cucumber


8-10 Cherry tomatoes


1/2 c Green onions


1 can of Cannellini beans


1/4 c Cilantro


Feta cheese (vegan optional)


Olive Garden Italian salad dressing


Olive oil

Squeeze of lemon


Salt and pepper to taste

Ingredients

METHOD

1.Chop all your vegetables

2.Place ingredients in a bowl

3. Add dressing, olive oil and squeeze of fresh lemon

4.Toss

5.Salt and pepper to taste

6. Enjoy!
