Want a cool, refreshing, healthy salad? It’s hot, sticky, and uncomfortable here in central Florida. What better meal option than this crisp, Mediterranean, cucumber salad?!
This recipe is by my best friend Callie. She served it with salmon patties and generous pours of wine at a ladies happy hour recently. Soooo delicious!
In addition to being refreshing and delicious this salad is also very healthy!
CANNELLINI BEANS

CUCUMBERS

Cilantro is a healthy aromatic herb that is a powerful Anti-inflammatory. The Cilantro combined with fresh lemon squeeze in this dish gives it a distinct Mediterranean flavor so be sure not to leave it out 😉
GREEN ONIONS
Green onions are also Anti-inflammatory, are good for the heart, boost immunity and keep your intestines clean. So be generous with those onions!

INGREDIENTS
1 large English Cucumber
8-10 Cherry tomatoes
1/2 c Green onions
1 can of Cannellini beans
1/4 c Cilantro
Feta cheese (vegan optional)
Olive Garden Italian salad dressing
Olive oil
Squeeze of lemon
Salt and pepper to taste
METHOD
1.Chop all your vegetables
2.Place ingredients in a bowl
3. Add dressing, olive oil and squeeze of fresh lemon
4.Toss
5.Salt and pepper to taste
6. Enjoy!
