This high protein skillet pancake inspired by the kitchn.com is so delicious you’ll forget you’re eating healthy!
INGREDIENTS
- 1 1/4 c oat flour
- 1 1/4 c plant-based milk
- 2 eggs
- 2 tsp baking powder
- 1/2 tsp baking soda
- 2 tsp agave
- 2 tbs oil
- 1 tbs protein powder
- 1/4 tsp sea salt
- 1/4 c of fruit [peaches, blueberries, apples, ect] optional
- walnuts
- Yogurt
METHOD
- Combine dry ingredients and stir
- separate eggs setting egg whites aside
- Combine the wet ingredients except the egg whites starting with the oil and stir until mixed
- Add egg whites
- Let sit for 10 minutes
- Add batter to a well greased cast iron skillet
- Add fruit on top
- bake at 375 for 25 to 30 minutes
- Serve with yogurt, fruit, walnuts and syrup 😋
