HIGH PROTEIN SKILLET PANCAKE RECIPE

This high protein skillet pancake inspired by the kitchn.com is so delicious you’ll forget you’re eating healthy!

INGREDIENTS

  • 1 1/4 c oat flour
  • 1 1/4 c plant-based milk
  • 2 eggs
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp agave
  • 2 tbs oil
  • 1 tbs protein powder
  • 1/4 tsp sea salt
  • 1/4 c of fruit [peaches, blueberries, apples, ect] optional
  • walnuts
  • Yogurt

METHOD

  1. Combine dry ingredients and stir
  2. separate eggs setting egg whites aside
  3. Combine the wet ingredients except the egg whites starting with the oil and stir until mixed
  4. Add egg whites
  5. Let sit for 10 minutes
  6. Add batter to a well greased cast iron skillet
  7. Add fruit on top
  8. bake at 375 for 25 to 30 minutes
  9. Serve with yogurt, fruit, walnuts and syrup 😋
