INGREDIENTS
- 3-4 carrots
- 1/2 roasted butternut squash
- 1 onion
- 2 cloves garlic
- 3 c vegetable stock
- 1 c plant based milk
- 1 tsp salt
- fresh herbs
- 1 tsp cinnamon
- 1 tsp turmeric
It doesn’t have to be fall to enjoy the robust, savory flavors of butternut sqash and carrots soup!
METHOD
- Preheat oven to 400°
- brush butternut squash and carrots with olive oil
- salt lightly
- place in oven and roast 25-30 minutes or until done
- Saute onion and garlic in a pot
- add salt
- Add remaining ingredients
- Cook on medium heat for 20-30 minutes
- blend until smooth
