Mushrooms are the ideal meat replacer! If you’ve given up meat, I’m sure you’re missing that robust, earthy flavor that mushrooms offer in spades.
I had heard about mushrooms that taste just like scallops and just had to try them out. They’re called king oyster mushrooms or trumpet mushrooms and they’re the largest in the oyster mushroom family, and by far the most flavorful.
I bought my trumpet mushrooms at the Beaches Green Market in Jacksonville beach from Son.and.skye and was ready to try them out.
INGREDIENTS
Trumpet mushrooms
4-5 cloves of garlic
olive oil
butter
parsley
pasta or rice
Look at those gorgeous trumpet mushrooms!! It’s almost a shame to cook them because they’re so naturally artistic.
Apart from their beauty, trumpet mushrooms are known to be powerful superfoods that that lower cholesterol and help with weight loss. They’ve also been linked to lowering the risk of breast cancer and prostate cancer. In addition, king trumpet mushroom extracts have been shown to have anti viral properties and to support bone health.
To be honest, at first, I thought paying so much for trumpet mushrooms was excessive; but if you take into account that you are replacing it with a piece of meat, you realize that they are quite economical. They are also gourmet.
There are various recipes on the Internet for trumpet mushrooms, however I wanted to keep it simple so that I could taste the main ingredient.
It was easy enough to make:
HOW TO MAKE TRUMPET MUSHROOMS
1.Chop mushrooms in scallop size slices.
2.Saute equal amounts of butter and olive oil in a pan.
3.Add garlic, sea salt and then mushrooms.
4.Sauteed for 3-4 minutes or until crispy on the outside.
5.Add parsely, garlic salt and pepper
6. Serve over linguini or your starch of choice
I had pea shoots on hand so I used those instead of parsley. Be creative and use what you have available.
The taste is similar enough to scallops but apart from that they were just delicious! Would definitely make this again and experiment with other recipes!
