This basil tofu recipe is so easy and delicious! I ordered it in a cafe in Geneva last week and I just had to come home and recreate it.
If you’re like me, you’ve got a pot full of basil sitting in the garden just begging to be used. It’s funny when you don’t have basil and you need it in a recipe you wish you had grown it, but when you do have basil you just can’t seem to find enough recipes for it. Well here’s a good one!! Have fun with it!
Friendly tip: Don’t skimp on the garlic or the basil 😉
INGREDIENTS
1 pack of tofu
3-4 peppers, red and yellow if possible
1/2 onion
6 cloves garlic
1 bag of green beans
1 Zucchini
1 tbs cornstarch
STEP 1: SAUCE
1 1/2 c basil
1 c vegetable stock
1 tbs sugar
2 tbs soy sauce
2 tbs oyster sauce
1 tbs rice wine
2 tsp ground ginger
STEP 2: PREPARE TOFU
- Press tofu – drain tofu and place on a large plate. Place another large plate over the tofu and place a heavy book on top. Let sit for at least an hour.
- When ready, cut tofu in small squares or rectangles
- Add 1 tbs cornstarch, 1 tbs soy sauce and 1 tbs olive oil to container and mix
- Toss tofu in mixtureÂ
- Place on a baking tray
- Bake at 400 for 25 minutes turning once
STEP 3: STIR FRY
- Saute peppers, onions and zucchini
- Add garlic
- Add 1 c of vegetable stock, 1 tbs soy sauce, 2 tbs oyster sauce and stir
- Add basil
- Put aside
- Saute green beans in oil
- Add tofu
- Add red pepper flakes
- Add pepper and onion mixture to tofuÂ
- Serve over rice or noodles
- Enjoy

Of course you can skip step 2 And Pan fry your tofu. It’s easier and it’s still delicious.. However I prefer baked tofu because it’s crispier.
