There are many theories to the origins of the burrito , many of which have to do with the facility of traveling with nutritious food wrapped up in the simple tortilla.
The bottom line is that this delicious meal originating in Mexico is a hearty high protein lunch, dinner or snack any time! 😋

Ingredients
- 1 bag of cannellini beans
- 10 large tortillas
- Salsa
- 3/4 cup corn
- 5 small peppers
- 1 large onion
- 6 cloves garlic
- Chile powder
- Garlic powder
- Adobo
- Paprika
- Bay leaf
- Salt pepper to taste
- Cheddar cheese
*** For a vegan version of these burritos you can use plant based cheddar cheese or skip the cheese all together. They are tasty enough to stand on their own.
HOW TO MAKE WHITE BEAN BURRITOS
Step 1
1. Rinse cannellini beans and soak with 1/2 onion, bay leaf and pepper over night
Step 2
1. Drain water
2. Put beans In a pressure cooker. Fill water to 2 or 3″ above beans. Add salt.
3. Cook for 20 min
4.Your beans should be nice and mushy
5. Strain out most of water
6. Season with:
1 vegetable or chicken bullion
1 tbs of chili seasoning
2 tsp of adobo
1 tsp of sea salt
2 tsp of paprika
2 tsp of a garlic powder
Step 3
1.In a frying Pan saute 5 or 6 small peppers, 1/2 onion, 5 cloves of garlic.
2.Add salt
Step 4
1.Add pepper mixture to beans.
2. Taste bean mixture and add more seasonings as needed.
They should be tasty 🙂
3.Add a generous amount of bean mixture to a tortilla
4. Add cheddar cheese
5. Add corn and 1 tsp of salsa.
6. Roll burritos
7. Cook in greased baking pan or Pyrex for 20 min at 350.
The beauty of this recipe is that you can make up 10 to 12 burritos at a time and freeze them. Take them out of the freezer and bake them or microwave them for a quick and easy meal.
