This tasty pea soup is great on a chilly day or any time of year really because it’s packed with protein and nutrients.
It’s also economical! For less than $1.20 a bag you can make a whole pot for about $3.50.
Pea soup was my daughter’s favorite recipe growing up so we had a pot on the stove at least once a month. You can also snazz it up making it with leeks or putting celery in it but below I have the basic ingredients needed that we all usually have on stock.
Soaking – Be sure to soak your peas and rinse well. This will reduce the gas you might get with legumes.
INGREDIENTS
- 1 bag dry peas (green lentils)
- 1 c onion
- 5 garlic cloves
- 2 carrots
- 3 veggie chicken bouillon
- 1 tsp oregano
- 1 tsp sea salt
- 1 tbs vegetarian adobo
- Salt and pepper to taste
- Green onions to garnish (optional)
HOW TO MAKE PEA SOUP
- Chop vegetables
- Put Pressure cooker on Brown and saute onions and garlic
- Add sea salt and stir
- Add carrots
- Add peas and stir for 2-3 minutes
- Add water, filling pot approximately 3/4 full.
- Cover and set timer on high for 18 minutes
When your pressure cooker goes off your soup is almost done.
Tasting time! Add veggie chicken bouillon and give it time to dissolve. Add salt and pepper and your favorite seasoning to taste. I use garlic salt and seasoning salt.
You can also add frozen broccoli pieces or spinach that that cook quickly in the hot broth. This is optional, of course.
Add hot pepper flakes to give it a zing if you like it picante!
You may not find the soup as thick as you want at first. If that’s the case, refrigerate the soup or let it sit a while. As it cools it will thicken up.
Adversely, if your soup is too thick after refrigerating it, just add water and stir.
Serve alone or over rice.
FREEZING OPTIONS
This hearty pea soup is so easy to freeze to use for future use. Just take it out of the freezer and use when you’re traveling, for lunches or a light dinner.
We all have those days when there’s nothing in the fridge and we’re too tired to go out. Just grab a jar of your tasty frozen pea soup. You’ll be glad that you have it on hand.
Caution: Be sure to freeze it right away as 3 day pea soup may be gas producing 😉
