Thankfully, today, we can go to our local farmers market or grocery store and cook up a meal 😋 Or those more adventurous of us can forage wild mushrooms in fields and forests.
However you get your mushrooms 🍄 doesn’t matter. They are always delicious.
There’s something so earthy about mushrooms that give your dish a robust flavor and provides a nice substitute for meat.
Below is my mushroom recipe that’s creamy and delicious and so easy to whip up 😋
INGREDIENTS
- Pasta
- 1 package mushrooms
- 2 c spinach
- 1 c plant-based milk
- 3/4 c white wine
- 1 onion
- 1/2 c parmesan cheese (use vegan cheese for vegan option)
- Equal parts butter and olive oil
- 5 cloves garlic
- 1 c pasta water
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1/2 tsp Pepper flakes (optional)
HOW TO MAKE MUSHROOM PASTA
1.Chop vegetables
2. Saute onions in butter and olive oil
3. Add garlic
4. Stir 3 minutes
5. Add mushrooms
6. Saute 3-4 minutes
7. Add salt and seasoning
8. Add wine and let simmer
9. Add pasta water
10. Add milk
11. Mix flour and broth and add into mixture
12. Stir and simmer until broth thickens
13. Add greens and pepper flakes
14. Season to taste
15. Add parmesan cheese
This recipe is vegetarian, plantbased and vegan friendly. Adjust ingredients as you like them. You may want to use plant based cream for a creamier option or omit the wine.
