I’m not gonna lie. Chicken Masala was my favorite item on the menu prior to my whole food plant based transition. I just loved the rich creamy sauce full of spices and the tender chicken.
Now that I’m living sensa chicken, I find that chickpeas satisfy that protein requirement and even the taste in many instances.
You are going to love this creamy, tomato based recipe full of vegetables and packed with protein!
Below is a recipe for 4 servings. Feel free to double it if you need to feed more mouths or if you want to freeze it for a future meal.
You’re not going to believe how easy this is! It will soon be your go to meal if you’re in a crunch for time or if you are craving a delicious vegan, vegetarian or whole food plantbased meal!
INGREDIENTS
1 can chickpeas
1 sweet potato
1 white onion
4 cloves garlic
½ tsp turmeric
1 tsp garam masala
½ cumin
1 tbs adobo seasoning
1-2 veggie chicken bouillon
1 tsp ginger diced
1 c frozen broccoli 🥦
2 tbs tomato paste
1 can diced tomatoes
1 cup coconut milk
1/2 cup water or vegetable broth
HOW TO COOK CHICKPEA MASALA
STEP 1
- Peel sweet potatoes and chop in cubes
- Boil sweet potatoes until tender
- Drain and set aside
STEP 2
- Chop onion and garlic
- Saute onions and garlic
- Add salt
- Remove from pan
- Add broccoli to pan and cook until tender
- Add sweet potatoes and toss
- Remove from pan and set aside
STEP 3 The sauce
- In the same pan add coconut milk, 1/2 a cup of water or vegetable broth, and tomato paste and stir until creamy.
- Add spices
- Add can of diced tomatoes
- Stir until creamy
- Taste and add veggie chicken broth or salt and pepper as needed.
- Add all ingredients back in pan
- Stir
- Enjoy 😉
Serve over rice or eat plain!
