Who would think that pasta with just 3 ingredients could be so good?
I first had this dish in Rome made by the good chefs there and I was inspired to try it at home. It did not disappoint! Fresh Basil from the garden, lotsa garlic, tomatoes from the farmers market and a good pasta! Add vegan feta or parmesan (optional)
SOOO GOOD!
INGREDIENTS
- 1 package of cherry tomatoes (approximately 2 cups)
- 7 cloves of garlic
- 1 lb of linguini or pasta of choice
- 1 c fresh basil
- 1 tsp oregano
- 1 tsp sea salt
- Parmesan cheese (optional)
- 1/2 c white wine (optional)
HOW TO MAKE TOMATO BASIL PASTA
- Chop onions and garlic
- Wash basil and remove stems
- Chop tomatoes in 2 or 3 pieces if using cherry tomatoes. If you’re using full size tomatoes, chop in bite size pieces
- Saute garlic in Olive oil
- Add salt
- Brown 2 or 3 minutes
- Add tomatoes
- Add wine and oregano
- Let’s simmer for 5 to 10 minutes
- Add pasta
- Add basil and toss
- Season
- Add parmesan cheese
- Enjoy
It’s best if you use fresh tomatoes and fresh basil for this meal as these 2 ingredients, and of course the garlic, make the flavor pop!
You can also sub out parmesan cheese for feta cheese. It gives it a completely different, but rich and sultry flavor!
