TOMATO BASIL PASTA

Who would think that pasta with just 3 ingredients could be so good?

I first had this dish in Rome made by the good chefs there and I was inspired to try it at home. It did not disappoint! Fresh Basil from the garden, lotsa garlic, tomatoes from the farmers market and a good pasta! Add vegan feta or parmesan (optional)


SOOO GOOD!

INGREDIENTS

  • 1 package of cherry tomatoes (approximately 2 cups)
  • 7 cloves of garlic
  • 1 lb of linguini or pasta of choice
  • 1 c fresh basil
  • 1 tsp oregano
  • 1 tsp sea salt
  • Parmesan cheese (optional)
  • 1/2 c white wine (optional)

HOW TO MAKE TOMATO BASIL PASTA

  1. Chop onions and garlic
  2. Wash basil and remove stems
  3. Chop tomatoes in 2 or 3 pieces if using cherry tomatoes. If you’re using full size tomatoes, chop in bite size pieces
  4. Saute garlic in Olive oil
  5. Add salt
  6. Brown 2 or 3 minutes
  7. Add tomatoes
  8. Add wine and oregano
  9. Let’s simmer for 5 to 10 minutes
  10. Add pasta
  11. Add basil and toss
  12. Season
  13. Add parmesan cheese
  14. Enjoy

It’s best if you use fresh tomatoes and fresh basil for this meal as these 2 ingredients, and of course the garlic, make the flavor pop!

You can also sub out parmesan cheese for feta cheese. It gives it a completely different, but rich and sultry flavor!
