I just love experimenting with new recipes on the Whole Food Plant-based Diet. It’s been over 4 years, and I’m still finding new delicious meatless recipes to cook.
This Penne alla Vodka by Seriouseats is a sure favorite 😍 Added some Gardein Plant-Based Meatballs and subbed out soy milk for heavy cream and it was delicious 😋
I did have to ‘beef” up the taste with some fresh basil and oregano that is not part of the original recipe. See ingredients below.
INGREDIENTS
- 1 lb pasta
- 3 cloves garlic
- 1 small onion
- 1 cup plant based milk
- 1/4 c vodka
- 1 tsp sea salt
- 1/3 c tomato paste 🍅
- 1 can diced tomatoes
- 1/2 c pasta water
- 3 tbs vegan butter
- Vegan Parmesan cheese 🧀
- pepper flakes
- 1/2 c fresh basil
- 2 tbs fresh oregano or 1 tsp dry
