I am in love with this recipe! It’s so simple and delicious and it’s full of protein! Plus it’s easy to freeze for future lunches or dinners on the go.
Be sure to serve it with your favorite plain yogurt, dairy free, if that’s your preference. I made a yogurt sauce with garlic, onions, lemon juice 🍋 and salt and pepper, that I pulsed in a blender
Then I mixed it with yogurt and served on top of the dahl. It’s so delicious 😋
INGREDIENTS
- 2 c lentils
- 2 onions
- 4 cloves garlic
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp curry
- 1 tsp salt
- 2 tsp ginger
- 1 tsp coriander
- 1 tsp paprika
- 3 1/4 c vegetable broth
- 1 c coconut milk
- 1 c diced tomatoes
- 2 tsp lime or lemon juice
- salt and pepper

Do you ever make crazy substitutions for a recipe when you just don’t want to go to the grocery store?This Thai inspired curry sauce with broccoli, mushrooms, and tofu is a great lunch or dinner choice. But I must admit I didn’t have rice noodles and used Trader Joe’s linguini. No worries.
