INGREDIENTS
- 1 russet potato 🥔
- 1 avocado 🥑
- 1 pint mushrooms 🍄
- 2 cloves garlic
- Lawry’s seasoning salt
- 2 2bs white wine
- juice of fresh lime
STEP 1: PREP POTATO
- Boil potato
- Slice in half
- Scoop out a spoonful of the potato and place on a plate
STEP 2: PREP AVO STUFFING
- Peel avocado 🥑
- Scoop out into bowl and smash with fork
- Add Lawrys Seasoning salt
- Add lime
- Set aside
STEP 3: PREP MUSHROOMS
- Wash mushrooms and drain
- Add olive oil to pan
- Add garlic
- Add mushrooms and garlic salt
- Stir 2-3 minutes
- Drain mushrooms
- Add more olive oil to pan
- Add mushrooms back in
- Add fresh oregano and/or parsley
- Add wine and cook on medium high heat until done
- Season to taste
STEP 4: BUILD YOUR POTATO
- Add a generous scoop of avo mix on potato
- Add mushrooms
- Enjoy 😉
