Don’t you just love discovering new ways to get more healthy protein in? Quinoa is one of those superfoods that provides a good source of plant protein and fiber.

The problem is that I don’t much care for the texture of this superfood. Consequently it’s a challenge for me to find tasty recipes with quinoa.
Props go to my best friend Callie who made this delicious quinoa salad with a potpourri of ingredients that I would never think to combine. It was so tasty I couldn’t stop eating it.

INGREDIENTS
- 1 c quinoa
- olive oil
- 1/4 c capers
- Feta cheese, vegan optional
- 1 can garbanzo beans, drained and rinsed
- onion powder
- Cherry tomatoes
- pickled red onions
- Ranch and Caesar dressing
- Jalapeño pepper, diced
- 1 cucumber, chopped
- 1/2 c candied pecans
- Fresh Dill, parsely, cilantro and basil
METHOD
- Cook 1 c of quinoa in 2 c water
- Add remaining ingredients
- Toss
- Serve
