QUINOA SALAD

Don’t you just love discovering new ways to get more healthy protein in? Quinoa is one of those superfoods that provides a good source of plant protein and fiber.

Unlike some plant proteins quinoa is a complete protein, meaning that it contains all nine essential amino acids that our bodies cannot make on their own https://www.hsph.harvard.edu/nutritionsource/food-features/quinoa/

The problem is that I don’t much care for the texture of this superfood. Consequently it’s a challenge for me to find tasty recipes with quinoa.

Props go to my best friend Callie who made this delicious quinoa salad with a potpourri of ingredients that I would never think to combine. It was so tasty I couldn’t stop eating it.

Delicious and nutritious! A win win 🏆

INGREDIENTS

  • 1 c quinoa
  • olive oil
  • 1/4 c capers
  • Feta cheese, vegan optional
  • 1 can garbanzo beans, drained and rinsed
  • onion powder
  • Cherry tomatoes
  • pickled red onions
  • Ranch and Caesar dressing
  • Jalapeño pepper, diced
  • 1 cucumber, chopped
  • 1/2 c candied pecans
  • Fresh Dill, parsely, cilantro and basil

METHOD

  1. Cook 1 c of quinoa in 2 c water
  2. Add remaining ingredients
  3. Toss
  4. Serve
