How about some healthy, vegan roasted cauliflower tacos? So fun to make and they’re delicious!
INGREDIENTS
- 1 head of cauliflower
- 2 tbs olive oil
- 1 tbs chile powder
- 1 tsp turmeric
- 1 tsp cumin
- 1/2 tsp paprika
- 1 tsp salt
- 1 clove garlic
- juice of fresh lime
METHOD
- preheat oven to 400°
- combine all ingredients in a container
- shake making sure Cauliflower is fully covered
- bake for 15 minutes on each side
CREAMY AVOCADO DRESSING
- 1 avocado
- 1/4 c plant-based milk
- 1 clove garlic
- juice of fresh lime
- salt
METHOD
- Blend all ingredients until smooth
- Pour over tacos 🌮
PURPLE SLAW
This sweet tart slaw is a nice companion to the avocado dressing and produces a tangy scrumptious flavor that makes your taco pop!
INGREDIENTS
- 1/2 head red cabbage
- 1/2 c spinach or kale
- 1/2 c mandarins
- 1 tbs mayo
- lemon juice
- cilantro
- salt and pepper
Chop vegetables and mix all ingredients adding more lime and/or mayonnaise to get desired flavor 😋
