ROASTED CAULIFLOWER TACOS

How about some healthy, vegan roasted cauliflower tacos? So fun to make and they’re delicious!

INGREDIENTS

  • 1 head of cauliflower
  • 2 tbs olive oil
  • 1 tbs chile powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1 tsp salt
  • 1 clove garlic
  • juice of fresh lime

METHOD

  1. preheat oven to 400°
  2. combine all ingredients in a container
  3. shake making sure Cauliflower is fully covered
  4. bake for 15 minutes on each side

CREAMY AVOCADO DRESSING

  • 1 avocado
  • 1/4 c plant-based milk
  • 1 clove garlic
  • juice of fresh lime
  • salt

METHOD

  1. Blend all ingredients until smooth
  2. Pour over tacos 🌮

PURPLE SLAW

This sweet tart slaw is a nice companion to the avocado dressing and produces a tangy scrumptious flavor that makes your taco pop!

INGREDIENTS

  • 1/2 head red cabbage
  • 1/2 c spinach or kale
  • 1/2 c mandarins
  • 1 tbs mayo
  • lemon juice
  • cilantro
  • salt and pepper

Chop vegetables and mix all ingredients adding more lime and/or mayonnaise to get desired flavor 😋
