Cucumbers are in season! Time to take advantage of the fresh unique flavor of this garden favorite. So easy to make and you can even count on getting your veggies in in this quick one pot meal!
INGREDIENTS
- 1 c cucumber
- 1/2 c onions
- 2 cloves garlic
- 2 tbs yogurt (vegan)
- 1 tsp nutritional yeast
- 2-3 tbs olive oil
- 1 tsp sea salt
- Feta cheese (vegan)
- pasta of your choice

This delicious Mediterranean dish inspired by @lennaomrani incorporates the cucumber peels into the recipe.
So be sure to wash your cucumber well and don’t throw away the peels! Set them aside for later after peeling.
METHOD
- Peel cucumbers
- Set peels aside
- slice vegetables
- Saute onions and garlic in olive oil
- Add salt
- Add cucumbers
- Saute for 3-4 minutes and set aside
- In a food processor or blender, blend the yogurt, 2 tbs olive oil, nutritional yeast, 1 clove raw garlic and sauted vegetables
- Serve over pasta
- Add in cucumber peels*
- Add feta cheese, vegan
- Add black olives, optional
This dish has a unique Mediterranean flavor. It’s wonderful served with Pita bread and Trader Joe’s Frozen Falafal 😋
*You may want to lightly saute cucumber peels but not too much because it adds to a unique crunchy flavor.
