Wow! Did you ever think that PANCAKES could be a superfood!!! Well, I’m no expert, but I’d say that 30 grams of protein and high fiber constitute some category.
Well maybe superfood is stretching it a bit but it certainly is a more feel good meal than a regular pancake recipe 😋
You’re also using fresh fruit, chia seeds, oatmeal, plantbased milk, nutritional yeast and quinoa. It’s a powerhouse of good foods for you!
So enjoy these guilt free pancakes any time of the day!
INGREDIENTS
- 2 c oatmeal
- 1 c plant-based milk
- 2 eggs, vegan optional
- 1/2 tsp of salt
- 1 tbs nutritional yeast or protein powder
- 1 tsp vanilla
- 4 tbs yogurt, vegan optional
- 1 tbs peanut butter
- 1 tbs chia seeds
- 1 tsp cinnamon
- 2 tbs cooked quinoa (optional)
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 2 tbs coconut oil
- blueberries
- walnuts
METHOD
- Blend dry ingredients in a blender or food processor
- Remove
- Combine all wet ingredients to a blender or food processor and blend
- Add dry ingredients to wet and mix well or blend in blender
- Heat oil in a pan
- Add batter to pan
- Cook on medium to medium high heat approximately 3 minutes or until top begins to bubble
- Flip pancake and cook an additional 3 minutes or until done
- Add blueberries and walnuts
- Serve with fresh fruit, yogurt, maple syrup or agave
***You may want to adjust consistensy of batter by adding more plantbased milk or water depending if you like thick or thin pancakes 🥞
This recipe makes approximately 6-8 pancakes. Each serving, 2-3 pancakes, yeilds approximately 30 grams of protein.
