CHICK’N AND EGGPLANT STIR-FRY RECIPE

Spice up your plant based menu with this gourmet and hearty meal!

INGREDIENTS

  • Eggplant-4 or 5 small purple eggplant 🍆
  • 4 gardein tenders or plant based chick’n
  • 4 tbs soy sauce
  • 2 tbs agave
  • 1 tbs Sesame oil
  • 1 tbs fresh lemon juice
  • 1 tbs fresh orange juice
  • 1 tsp ginger, ground or sliced thin
  • 2 cloves garlic

METHOD

  1. Chop vegetables
  2. Make the sauce using the last 7 ingredients above
  3. Saute eggplant and garlic in oil
  4. Precook Gardein chick’n in the oven following directions on package
  5. Chop chick’n into bite size pieces
  6. Add cooked chick’n to eggplant saute
  7. Add the sauce stirring slowly until it thickens
  8. Serve with rice
  9. Top with scallions and sesame seeds
