
Spice up your plant based menu with this gourmet and hearty meal!
INGREDIENTS
- Eggplant-4 or 5 small purple eggplant š
- 4 gardein tenders or plant based chickān
- 4 tbs soy sauce
- 2 tbs agave
- 1 tbs Sesame oil
- 1 tbs fresh lemon juice
- 1 tbs fresh orange juice
- 1 tsp ginger, ground or sliced thin
- 2 cloves garlic

METHOD
- Chop vegetables
- Make the sauce using the last 7 ingredients above
- Saute eggplant and garlic in oil
- Precook Gardein chickān in the oven following directions on package
- Chop chickān into bite size pieces
- Add cooked chickān to eggplant saute
- Add the sauce stirring slowly until it thickens
- Serve with rice
- Top with scallions and sesame seeds
