Spice up your protein intake with these yummy pinto bean burritos 🌯
So easy to make!!! And they’re plantbased and vegan friendly 🌱
INGREDIENTS
- 2 cans pinto beans
- 1 c rice, cooked
- 1/2 c corn
- 1 tbs cumin
- 2 tsp chile powder
- 1 tsp sea salt
- 1/4 c salsa
- 10-12 large tortillas
- Cheddar cheese (plant-based optional)
METHOD
- Blend beans and spices in a food processor or blender
- Give it a quick taste for flavor
- Add approximately 1/2 c of the bean mixture to the middle of the tortilla
- Add cheese (optional)
- Add rice, corn and salsa
- roll into a burrito, folding the middle sides first and tucking the ends in
- cook on the stove top until each side is brown. Or place all burritos in a casserole dish and cook at 400° for 20-30 minutes
- Serve with your favorite salsa, guacamole and sour cream! 😋
These burritos freeze easily either separately or in a sealed tight container. Pull out for lunch or dinner any time for a high protein plantbased snack or meal!
SALSA RECIPE
- 1 can of petite diced tomatoes 🍅
- 1-2 tbs olive oil
- 1-2 tbs lime juice
- 1 red onion
- 2 cloves garlic
- 1 c cilantro
- 2 tbs cumin
- garlic salt to taste
