VEGAN BURRITOS RECIPE

Spice up your protein intake with these yummy pinto bean burritos 🌯

So easy to make!!! And they’re plantbased and vegan friendly 🌱

INGREDIENTS

  • 2 cans pinto beans
  • 1 c rice, cooked
  • 1/2 c corn
  • 1 tbs cumin
  • 2 tsp chile powder
  • 1 tsp sea salt
  • 1/4 c salsa
  • 10-12 large tortillas
  • Cheddar cheese (plant-based optional)

METHOD

  1. Blend beans and spices in a food processor or blender
  2. Give it a quick taste for flavor
  3. Add approximately 1/2 c of the bean mixture to the middle of the tortilla
  4. Add cheese (optional)
  5. Add rice, corn and salsa
  6. roll into a burrito, folding the middle sides first and tucking the ends in
  7. cook on the stove top until each side is brown. Or place all burritos in a casserole dish and cook at 400° for 20-30 minutes
  8. Serve with your favorite salsa, guacamole and sour cream! 😋

These burritos freeze easily either separately or in a sealed tight container. Pull out for lunch or dinner any time for a high protein plantbased snack or meal!

SALSA RECIPE

  • 1 can of petite diced tomatoes 🍅
  • 1-2 tbs olive oil
  • 1-2 tbs lime juice
  • 1 red onion
  • 2 cloves garlic
  • 1 c cilantro
  • 2 tbs cumin
  • garlic salt to taste
