Fresh beet salad is one of my favorite salads and my all time favorite lunch box meal! This root vegetable is sooo fresh and healthy, I feel like I’m eating right out of the garden. Please enjoy my short poem and easy recipe below:
ODA A LA REMOLACHA
Oh Beet! ….Victorious in your splendour — So red, succulent and so sensual,
Your pool of sanguine nectar spills out onto the kitchen counter as it feeds and nurtures the soul.
I first fell in love with you in Guillermo del Toro’s Pan’s Labyrinth where you served as a co-conspirator against an oppressive patriarchal regime.
Later when I first placed my hands on your awkwardly ball-shaped body, I marveled at your rich texture, your earthy taste and the big pot of shimmering scarlet water you left behind
I have a particularly strong penchant towards you, my crimson, gorgeous superfood. I’m in awe of you, I respect you and I love to eat you
… especially with a little bit of balsamic vinaigrette, basil and gorgonzola 😉
Here is my beet salad recipe
Ingredients
1-2 large beets
1 red onion, chopped fine
fresh basil- 3-4 leaves, chopped fine
Cherry tomatoes, chopped
Crumbled Gorgonzola cheese or Feta cheese
Balsamic vinaigrette dressing
How to make Delicious Beet Salad?
- Cook your beets in a pot filled 3/4 of the way with water until done (20-30 minutes depending on the size
- Let cool
- Chop into small bite-sized cubes
- Add the remainder of the ingredients above and toss
- Enjoy the refreshing flavor of this succulent root vegetable

Ingredients
1 cup of beet juice
beet stems
2 slices of beets
1/2 cup of blueberries
1/2 cup of strawberries
1/2 cup pineapple
squeeze of lime
dash of cinnamon
add honey (optional)
Blend in a blender and enjoy!
