Theresa’s Quick and Easy Swordfish Dinner Recipe

I am so lucky to have my wonderful sister live nearby. She’s always been able to whip up something out of nothing effortlessly which is what she did with the next featured dish. And between work, a bike ride and studying for a real estate exam for her 2nd career she cooked up an amazing meal in less than 20 minutes.

Ingredients 

Publix frozen swordfish, 2 pieces

1-2 zucchini 

Greek seasoning 

Olive oil 

Trader Joe’s wild rice

Salt and pepper to taste

How to make Theresa’s Quick and Easy Swordfish Dinner?

STEP

1.Season swordfish with Greek seasoning and olive oil

2. Wrap 2 pieces of swordfish in aluminum foil 

3. Cook 425 for 20 minutes 

STEP 2

Zucchini

1.Slice zucchini in quarters

2. season with olive oil and Greek seasoning 

3. Microwave in glass container 1 -2 minutes

STEP 3

Prepare Trader Joe’s wild rice according to directions on the bag.

Because we’re all so busy and on the go, it’s nice to have a healthy, easy, delicious meal to go to.
