Plant based experts recommend choosing a colorful pallet of fruits and vegetables to include in your daily menu. This creamy colorful slaw hits the mark with its vibrant purple, mango and green hues. Plus it's crispy and delicious! The recipe below serves 4-6 people but you can double it up for a larger crowd. Ingredients
3 pieces of frozen Atlantic caught Salmon
Olive oil
Red cabbage
Bag of shredded cabbage, or chop 1/2 head of green cabbage
1 cup of chopped mango
1 small cup of Mandarin oranges
seasoning salt
1 cup of cilantro chopped
How to make Creamy Mango Salmon Slaw with Cilantro and Lime?
You can use fresh salmon or frozen, of course. I chose to use frozen because it’s easier and it’s always easily on hand. Also, I prefer to enjoy fresh salmon baked or pan fried by itself because it’s my favorite fish choice. The recipe below is for frozen salmon but feel free to adjust it if you want to go fresh!
1. Defrost frozen salmon and pat dry
2. Heat olive oil in pan and let it get hot
3. Season salmon with seasoning salt
4. Place salmon in pan and let cook on medium to medium high for 3 minutes
5. Turn over, season the other side and let it cook for 3 more minute
6. Remove from pan and let cool for 15-20 minutes
7. In a large bowl, place the bag of coleslaw, 1/2 head of chopped red cabbage and coleslaw dressing
8. Chop the mandarin oranges and add to slaw with juice
9. Chop mango in bite size pieces and add to slaw
10. Add chopped cilantro to slaw
11. Add salt, pepper and juice of fresh lime to taste
12. Stir and enjoy!
Creamy Slaw dressing recipe
1 cup of vegan mayonnaise or regular mayonnaise
2 tbs of red vinegar
1 tbs of honey
1 tsp of seasoning salt
Juice of 1/2 of fresh lime
