Peruvian Fish Soup
Peru is known for their exquisite multicultural cuisine and has been recognized as one of the world’s best culinary destinations in the world and this simple fish soup does not disappoint. Full of collagen, nutrients and rich flavors, this dish is perfect on a cold day or for those days when you need a little rejuvenation.
Chilcano de pescado has its origins in Chilca Peru, a fishing town, and was said to be prepared by the fishermen there.
Others like Pedro Murrieta say that this soup was common among the poor given that its so economical to make.
Another interesting fact about Chilcano de pescado is its nickname, “Levantamuertos” (which basically means raising the dead) as it is commonly used as an elixir for a hangover.
INGREDIENTS
Fish head and spine
2 chopped garlic cloves
1 chopped onion
2 potatoes, finely chopped
small piece of ginger, sliced thin
1 celery stalk, chopped
1 chopped scallion
1 pepper
2 fish filets
½ bunch of cilantro
INSTRUCTIONS
- Wash the fish head and spines thoroughly
- Heat olive oil in a pot and saute garlic, ginger, onion, celery and pepper
- Add the fish head and spine
- Season with salt and pepper
- Fill pot with water and simmer for 1 hour
- Strain the broth removing head and spine
- Add the potatoes to the broth and cook for 20 minutes
- Add cilantro and scallions and cook for 2 minutes
- In a separate frying pan cook filets of fish seasoned with salt and pepper
- In a bowl, place a piece of fish and pour broth over it
- Top with fresh cilantro leaves, scallions and a generous squeeze of lime
- Enjoy!
For even more calcium you can blend the fishbones and strain them and add them into the broth.
