Elwood was a tall, handsome, Southern gentleman who was in our lives for some 15 years while he courted my gracious, beautiful mother in Charleston SC. Elwood liked to square dance, he took weekend trips with my Mom and he joined us at almost every family reunion during this time period; but I never knew Elwood to be a lover of fine cuisine, nor was he an expert in culinary matters.
He did boast of his delicious salmon patties that he would make periodically. I never did get the opportunity to try them while he was with us on this big green earth, but when I inquired about it last week, my mother dug through her kitchen drawer.
Among an endless supply of twist ties, pens, scissors, recycled plastic bags and recipes that she had saved during a life time, she miraculously pulled out Elwood’s famous salmon patties recipe.
We read it over, turned our noses up at the idea of adding mayo and considered various other options for making salmon patties during my brief visit to Charleston. We decided to go out to eat instead, but upon my return home, I did make Elwood’s recipe and they were not only easy to make – they were moist, salmony and delicious! 🙂 😃 Here’s the recipe!
INGREDIENTS
1 can of Salmon
1/2 cup of dry breadcrumbs
1/2 cup of chopped onions
4 tbsp of mayonnaise
2 eggs
2 tsp of lemon juice
2 tsp of parsley flakes
1/4 tsp of garlic salt
HOW TO MAKE ELWOOD’S DELICIOUS SALMON PATTIES?
1.Chop onion in small cubes
2. Open Can of Salmon
3. Drain juice from salmon
4. Take bones and skin out of salmon
5. [Optional] smash bones with a fork. Add to the mix. (This adds extra calcium to your recipe)
6. Breadcrumbs. I make my own Breadcrumbs. I toast 2 pieces of wholegrain bread, put them in a Ninja and blend to the desired consistency. You could use any blender or a food processor or you could use bread crumbs.
7. In a large bowl combine salmon, bread crumbs, onion, mayonnaise, eggs, lemon juice, parsley and garlic salt.
8. Mix gently
9. Shape mixture into 8-10 patties.
10. Chill in the refrigerator for a half hour. (This will help the patties to keep their form while cooking)
11. Cook in lightly greased frying pan on medium to medium high until both sides are brown [approximately 3-4 minutes on each side].
12. Pour a honey dijon dill sauce over for a tastier meal and serve with brown rice, mango cilantro coleslaw or your favorite side dishes.

I have tried so many different recipes for salmon cakes because I just love salmon with anything. This is by far the best and the simplest recipe and it makes a perfect entree for your Plant Based diet.
You may be tempted to tweak it a bit here and there, but I strongly recommend that you that you follow this simple recipe at at least one time. It does not disappoint!
HONEY DIJON DILL SAUCE
- 1 tbsp olive oil
- 1 tbsp cider vinegar
- 3 Tbsp dijon mustard
- 1 Tbsp pure honey
- 1 1/2 Tbsp dill weed
DIRECTIONS
Whisk all ingredients in a bowl or blend in a blender until smooth and creamy.

Salmon patties can be easily frozen for future meals. Just place them in your favorite freezable container and freeze. Pull them anytime out and include them in your plant based menu for lunch or dinner.

Salmon belongs to the Meat and Alternatives food group and makes a perfect addition to a Plant based whole food diet if you include fish in your diet.
