Dark Chocolate Chip and Walnut Pumpkin Muffins

Have you ever struggled to make the perfect combination of healthy and delicious muffins? I have! I have had more than my share of healthy muffins that could be used as baseballs and delicious muffins, that are, in essence, no more than glorified little cakes, or cupcakes, if you will.

A few years ago I came across a wonderful recipe by Meatloaf and Melodrama that I found online. I decided to tweak it a bit and include about 50% of healthy ingredients and 50% of decadent ones.

I believe that I have accomplished a guilt free delicious muffin that I can include in my repertoire. In fact since I found this recipe I have had no desire to cook any other.

INGREDIENTS

  • 1 can of 100% pure pumpkin 🎃
  • 2 eggs
  • 1 cup of flour
  • 1 cup of ground oatmeal
  • 1 tsp baking soda
  • 2 tbs flax seed
  • 1/3 – 1/2 cup dark chocolate chips (depending on your preference;)
  • 1/3 cup of walnuts
  • 1/2 cup of apple sauce
  • 1/3 cup of oatmilk or plant based milk
  • 3/4 cup brown sugar
  • 1 tsp of sea salt
  • 1 tsp of cinnamon
  • 1/2 cup of shredded carrots 🥕 (optional)

HOW TO MAKE DARK CHOCOLATE CHIP AND WALNUT PUMPKIN MUFFINS

1. Preheat oven to 350

2. In a blender, grind a cup and 1/4 of dry oatmeal into flour consistency

3. in a large bowl beat 2 eggs

4. Add flour, ground oats, sugar, salt, baking soda and stir

5. Add remaining ingredients and mix . (Be careful not to over mix)

6. Grease muffin pan with oil or butter or spray with Pam

7. Pour batter into muffin pan about 3/4 full.

8. Sprinkle with dry oats and/or pumpkin seeds (optional)

9. Cook for 20 minutes and check with a toothpick . Cook 5-10 Minutes more if needed.

(I use a big muffin tin so I need to cook it a little bit longer)

10. Let cool a few minutes before removing from the tin.

Enjoy for breakfast or as a snack. They’re great with a cup of tea mid afternoon.
