Vegan Chicken and Broccoli Stir Fry is not only delicious, it’s so easy to make and it’s a great way to get your vegetable intake for a Whole Food plant based diet.

The broccoli in this recipe is so tasty you’ll want to double the ingredients. The recipe calls for 1 bag, but I use 1 1/2 or 2.
INGREDIENTS
1 bag of meatless chicken tenders
1 large bag of frozen broccoli florets or 1 lb of fresh broccoli
3 cloves of garlic, minced
1 tbsp ginger, minced
2 large scallions, chopped
SAUCE
1 tbsp rice wine or apple cider vinegar
2 tbsp of maple syrup, brown sugar or honey
1/3 cup sesame oil
1/3 cup of soy sauce
1 cup of vegetable broth or water
2 tbsp cornstarch
METHOD
1.Place all ingredients in Mason jar and stir or shake
2. Set aside
HOW TO MAKE VEGAN CHICKEN AND BROCCOLI STIR FRY
1.Make the sauce. Whisk all sauce ingredients above in a jar or bowl and put aside
2. Cook the veggie chicken in the oven according to instructions
3. In a large wok or frying pan stir fry scallions, garlic and ginger on medium high heat
4. Add cooked meatless chicken and stir fry 2-3 minutes
5. Remove from pan and set aside
6. In same pan add broccoli florets and stir fry until tender (don’t overcook because you want the broccoli to be a little snappy)
7. Add sauce and stir until it thickens (be sure to taste the sauce. If its too salty add water little by little)
8. Add veggie chicken and stir
9. Sprinkle with sesame seeds (optional) and serve over brown rice or noodles

The nonmeat chicken tenders taste like meat in this recipe. I use Gardein and I chop it in halves or thirds to simulate real chicken in traditional chicken and broccoli recipes.

You could make this recipe without the meatless chicken but to be honest with you you’ll be eating so much broccoli with it the benefits outweigh any disadvantages you believe nonmeat products to have.
