Salmon Pasta with Kale and Sun dried tomatoes is so rich and sultry you’ll surely be going back for more. Set aside a gym day soon after because you will be working off some pasta gainage.
This is hands down my kids favorite meal growing up and also the meal they ask for when they came home from college or home for the holidays. Of course it’s a deviation of the wonderful pasta dish prepared by my father that was passed down through the Lapolla family, linguini in clam sauce, but it’s original in its own right. Our family, like many, has a penchant for pastas in rich flavorsome sauces that are pleasing to the pallet but unkind to the waistline 😉
This dish is also versatile in its possibilities. I have substituted the salmon for shrimp; combined shrimp with salmon; and have even made it with penne pasta.
You can even make a vegan version of this adding up some nutritional yeast for texture and plant-based seafood. But if you’re on a more flexible plant-based whole food diet and you eat seafood, I recommend making the recipe just as it is.
My children and I made Salmon Pasta with Sun dried tomatoes and kale last weekend for an early Thanksgiving celebration and it was so much fun! Everybody did their part to help and it turned out to be a very special family event.
INGREDIENTS
1 lb of Salmon
1 ½ boxes of Barilla linguine
1 bunch of fresh kale
2 onions
5-6 cloves of garlic
1/2 bag of Trader Joe’s sun dried tomatoes
½ cup of white wine
Olive oil
Garlic salt
Pepper
Badias Seasoning salt
HOW TO MAKE SALMON PASTA WITH KALE & SUN DRIED TOMATOES
- Boil water and cook pasta al dente
2. Chop onions and garlic
3. Chop or cut sun dried tomatoes into 1 cup of boiled water and let sit while you prepare the meal
4. Wash Kale and chop or cut into medium sized pieces (not too small)
5. Saute onions and garlic in a frying pan with olive oil
6. Add 1/2 of the kale to the mixture
7. Set aside mixture in a bowl
8. Season salmon and place in Frying Pan with Olive oil on medium high heat, skin down
9. Cook 3 to 5 minutes or until skin easily falls off salmon
10. Turn over salmon and season, adding the rest of the kale to the pan
11. Add wine and continue to cook breaking apart salmon gently with spatula or wooden spoon (careful not to overcook salmon).
12. Set aside and let cool (you don’t want the heat from the sauce overcooking your pasta)
13. Mix all ingredients including the sun dried tomatoes soaking in water
14. season to taste
15. Let the pasta sit for 15 minutes to marry the flavors.
16. Add parmesan cheese, optional
