If you love chick peas, love raisins and love tangy interesting flavors, this is the dish for you! Whip it up in just 15 minutes and you have a high protein tasty meal or side dish for 2 or 3 days.
Ingredients
2 cans of chickpeas, drained and rinsed
1/2 a cup of cilantro
1 medium red onion, chopped
2 carrots shredded or chopped small
2 cups of broccoli chopped into bite sized pieces
1/2 a cup of raisins
1/2 a cup of peanuts
Combine the above ingredients and add dressing. Serve plain or on top of a bed of lettuce.
Dressing
2 tablespoons of Mayonnaise
juice of a 1/2 of a fresh lemon
1-2 tbsp of honey
1 tbsp a tablespoon of curry
garlic salt
Whisk ingredients of dressing to desired consistency and add to mixture. You can add a little milk or oat milk to thin the dressing.
