If you love chick peas, love raisins and love tangy interesting flavors, this is the dish for you! Whip it up in just 15 minutes and you have a high protein tasty meal or side dish for 2 or 3 days.
INGREDIENTS
- 2 c chickpeas
- 1/2 a cup of cilantro
- 1 medium red onion, chopped
- 2 carrots shredded or chopped small
- 2 cups of raw broccoli chopped small
- 1/2 c of raisins
- 1/2 c of peanuts
- 1/2 c green grapes
- Red pepper flakes
HOW TO MAKE CURRY CHICKPEA SALAD
- Chop vegetables
- combine all ingredients to a large bowl
- In a high speed blender combine all of the ingredients of the dressing plus 1/4 c chickpeas and a handful of cilantro
- Add dressing to salad
- Salt and pepper to taste
Combine the above ingredients and add dressing. Serve plain or on top of a bed of lettuce.
DRESSING
- 2 tablespoons of Mayonnaise
- 2-3 tbs plantbased milk
- juice of a 1/2 of a fresh lemon
- 1-2 tbsp of honey
- 1 tbsp a tablespoon of curry
- 1 large clove garlic
- 1 tsp white vinegar
Whisk ingredients of dressing to desired consistency and add to mixture. You can add a little milk or oat milk to thin the dressing.
